As the weather heats up, our bodies stop craving hot and toasty winter foods and begin calling for light, fresh meals. Here are two of our favourite nourishing and delicious spring recipes - try them and let us know what you think!
VEGETARIAN RICE PAPER ROLLS
Need a quick and healthy lunch? Rice paper rolls are both refreshing and filled with yummy, good for you veggies.
Ingredients:
Rice paper sheets
Extra firm tofu Carrot
Celery
Cucumber
Avocado
Basil
Coriander
Method:
Preheat your oven to 180 degrees and grease a baking tray in preparation
Wrap your tofu in a clean tea towel or paper towel and set something heavy on top of your little bundle in order to best get rid of all moisture. Leave to sit for at least 10 minutes.
Cut your tofu into thin rectangles and season with a pinch of chilli powder.
Saute in oil over medium heat for 5 minutes, ensuring that all sides of your tofu rectangles are browned. Finish off by baking your tofu in the oven for 15 minutes so that its extra crispy.
Whilst it cooks, rinse your vegetables and cut them into thin rectangles.
Once your tofu is cooked, its time to get rolling! Fill a shallow bowl with warm water and place one of your rice paper sheets into the water for 5 seconds to soften. Then lay on a bench.
Fill your rice paper roll with a small amount of your vegetables and tofu. 1-2 pieces of each should do. Top with finely diced herbs.
Fold the top and bottom towards the middle of the rice paper sheet, and roll your rice paper together!
Eat and enjoy!
COFFEE BANANA SMOOTHIE
Ready for a pick me up? Combine coffee with the energetic powerhouse banana and you’ll perk up in no time.
Ingredients:
Espresso shot of coffee (instant or from coffee machine), pre-made and cooled in the fridge.
1 frozen banana
Spoonful of coconut yoghurt
1 cup of milk of choice
Pinch of cinnamon
Method:
Add all ingredients into a blender and blend. Pour into a glass and sip away - it’s that easy!
